Great soda water at home!

Well first off, you need a soda siphon.  Something like this iSi from target for 50 bucks:

The problem with this method though, is when you put water in it, it A.  is never as fizzy as you want it. and B. does not have the salts or minerals of a great soda water.  This is important because those salts are adding or brining out subtle flavors in your soda's or cocktails.  So here's the trick!  Get your favorite naturally bubbly mineral water.  I myself like pellegrino, but there are many others out there.  These have all your great minerals and salts already in them, BUT not bubbly enough for a great cocktail or soda in my opinion.  So, naturally just add the mineral water to your soda charger!  Charge it with your CO2 and put the charger in the fridge for one hour.  This gives it time for the bubbles to infuse in your water, and also the coldness helps this process along.  And there it is, start making some soda syrups and get yourself some acid phosphate or lactart from http://www.artofdrink.com/store
